January Recipe: BEEF STEW

Yada yada yada, recipe calendar, etc. There's a better way to go about this but who has the time to do everything right? So without further ado: January's recipe! BEEF STEW 4-6 bowls90+ min Treat yourself and eat this with some bread from a real bakery, or at least from the nicer part of the grocery store. INGREDIENTS Butter/OilCheap beef cut into cubesFlour for dredgingCarrotsOnionGarlicCeleryFrozen peasPotatoesBeef brothSaltPepperTomato PasteRed Wine (optional)Italian seasoning(oregano, thyme, rosemary, sage.. whatever you have on hand)Bay leaf DIRECTIONS Preheat oven to 350F. Gently scrape out the gills of the mushroom caps with a spoon. They’re perfectly edible, but we need to make room. Pat them dry with a paper towel. Slice your cherry tomatoes in halves, and slice/tear your cheese into similarly sized chunks. Stack and roll your basil leaves, and slice the ends until you have a pile of little shredded basils. Mince garlic and mix with about a tablespoon or two of olive oil. Brush garlic oil on the inside of the mushroom caps. If you have any leftover, brush the outsides as well! Try to evenly pile your tomatoes and cheese in your little mushroom bowls. Pop em in the oven on a baking sheet until the cheese has melted (more than 5 minutes but probably less than 10)…

I’m mirroring some of this in my news newsletter as well, so sorry if there is overlap!It’s been a very busy summer and it looks like fall is getting even busier as we head into the Christmas prep season (I know I know it’s only September but in my world you gotta have at least some of the back end work done by the end of August)As most of you know, I made a calendar in 2022 and a new one in 2023 based on a bunch of landscape illustrations I’d done, but 1. I haven’t had time to do very many full pieces this year and 2. I kind of want to do something new anyway. I also don’t have time to draw weekly journal comics anymore so for the time being that specific project is on hold for a while as I work on a long form fiction comic as well as a collection of recipes I’m writing and illustrating!!I’m working on turning 12 recipes into a 2024 calendar, with the goal of having a full cookbook’s worth by sometime next year. At that point I’ll probably release it (or at least a lot of it) for purchase digitally, but I also want to look at self-publishing a physical book if there is enough interest for it.
