July Recipe: WATERMELON FETA SALAD

Hey all! June was absolutely fucking bonkers and my health is starting to take a bit of a nosedive as a result of so I’m taking a week off to recoup. I will share some new art with you relatively soon! In the meantime, please enjoy this recipe!

Every watermelon season I spend like 6-8 weeks eating mostly watermelon, often in salad form. I cannot recommend it enough. The honey lime just elevates the whole thing, it’s SO refreshing, and the basil just complements the whole thing wonderfully. Also, fun fact: basil belongs to the mint family so you can also try it with mint if that’s what you prefer, or that’s what you have on hand!

WATERMELON FETA SALAD


INGREDIENTS

1/4 Watermelon
1/2 Cucumber
Feta Cheese
Honey
Lime Juice
Fresh Basil*

*Mint is very good too! I just prefer it without.

This is a good recipe to practice experimenting with ratios by eye and taste because it’s pretty impossible to mess up.

I usually do about 1:1 honey to lime juice (about a tablespoon or so)

When deciding how much herb and feta to use, just go with whatever sparks joy. Too much of either isn’t going to make anything taste bad, and if there’s too little, it’s easy to add more.

Try rolling the lime on the counter under your palm before cutting it open to release more juice!

Another tip: if your lime is cold, pop it in the microwave for about 10 seconds before juicing.

DIRECTIONS:

  1. Chop your watermelon and cucumber into hefty little cubes or a close approximation. Something you can really sink your fork into. Put ‘em in a big bowl.
  2. Mix together your honey and lime juice. If your honey isn’t mixing, try zapping it in the microwave for about 5-10 seconds.
  3. Roll up your basil leaves (I usually use roughly 15 or so) and thinly slice it into fancy little strips. You can just chop it like you’d chop anything and call it rustic but where’s the fun in that?
  4. Crumble however much feta your little heart desires into your watermelon cucumber bowl. I never buy pre-crumbled feta because it lasts much longer in the brine and it’s tastier and honestly just better in every conceivable way but if you prefer dry crumbled feta I won’t judge.
  5. Toss it all together, evenly coating it with the dressing.
  6. At this point I would secretly eat it all for lunch while my toddler is napping, because she’d thief all my watermelon out of the bowl and only a little bit of cucumber, thus ruining the ratios

    Then she’d decide she didn’t like the tiny crumb of feta or basil she accidentally took and she’d mangle the cucumber with her drooly wee baby chompers, before spitting it back out and tucking it into my hand.

    A wet little gift that I don’t want, like a cat bringing home a half-dead rodent, and sometimes I just don’t have the energy for that, you know?
